What's to eat?

During spring break I treated Ty to several of his favorite places to eat for lunch. Lu's Kitchen, Chipotle, Jose Pepper's, and one of my favorites Big Boy's. I know that's a lot of eating out but I fixed dinner at night! Plus I'm just doing my part to save this economy.

Last week I went to the store and stocked up on Lean Cuisine since they were on special for half off. Brian can eat those things no problem but I would rather take homemade leftovers for lunch instead. Although I did take a Swedish Meatball dinner yesterday for lunch and today I am eating the last of the Mexican Chicken I made last week.

Speaking of last week, one night I had made Southwest Chicken salad. I was short on a few of the ingredients but normally it consist of a bed of spinach, black beans, corn, black olives, green onions, sun dried tomatoes, chicken, pepper jack cheese, southwest ranch dressing, and tortilla strips. Well we had left over Chicken, corn, black olives and black beans. So last night I went to the store for more torts and cheese. I cut the chicken into small pieces and mixed in the corn, beans, olives and cheese and made quesadillas. Served with sour cream and salsa. Oh they were so good! And there's enough for more tonight. That is if Brian and Ty will eat them as I am heading to Corner Cafe to meet a friend. Girls Only!!! :)
