Breakfast Burritos

Last summer while on our annual lake trip Lisa M. introduced me to Chorizo, a Mexican sausage. We made breakfast burritos and they were super delicious. So on the next trip to the grocery store after getting back from the lake, I had purchased some and threw it in the freezer. (You need a nice size crowd to feed for what I bought.)

I had intended to take it out to mom's on New Year's Eve to make burritos for breakfast in the morning since they had never had it but plum forgot about it as it continued to occupy space in the freezer.

Then a couple of weeks ago after celebrating Brian's birthday my inebriated friend and I decided to cook breakfast the next morning so I threw the Chorizo in the fridge to thaw over night. I told her we were out of torts (tortillas) but Brian could run to the store and get them. And she offered up that we could make our own! THAT SHOULD HAVE BEEN MY CLUE. I should have known better, that next morning when I got up our sobered friends had coats and shoes on bidding farewell. Wait! What about breakfast?! I should have known it was the alcohol talking when she suggested we make the torts from scratch. (However, I do have a recipe from the newspaper I want to try about making my own.)

So there you have it, I have been looking at this Chorizo staring me in the face waiting for me to do something with it since. Well last night was the night. I thought I could make my Mexican Chicken casserole with the Chorizo in place of the chicken. But my son warned me, "Do not waste a bag of Doritos!" and "I don't like to add anything to my Mexican Chicken." So I chickened out and made breakfast burritos instead.

I didn't make them the exact way we did at the lake so I called Lisa and inquired. "Lisa, it's your white friend. How do I know when the Chorizo is done?"

(At the lake we fried potatoes, then added the Choizo and finally scrambled the eggs with in it all. I don't know about you - but I don't like leftover and reheated eggs.)

Choizo is red and has an... oh an... unpleasant consistency right out of the package. If your familiar with the Bristol Stool Scale, it resembles type 4. Lisa informed me it only takes about 5 mins to cook. (with that info I thought it was best not to look at the ingredients listed on the package.) After cooking it takes shape of ground beef. I drained it on 4 paper towels on a plate (the fat content is unbelievable); there's a reason I'm giving you this information.... Then I fried the potatoes, which turned out VERY WELL!

At this point, I would then cook the burritos for one person at a time to ensure freshness. I threw back in the pan - sausage and potatoes to reheat a little. Trying to mash up the potatoes a little bit I broke a turner. Threw that away and got my eggs ready to scramble in. While that was taking form, I nuked the torts then plated Ty's 2 burritos and he said, "Oh yea, I remember these now - they are really good. Especially when you make them!" - I love my guy!!! I then made me one and boy - oh - boy was it spicy. Normally the hotter the better for me but I couldn't wait to coat my stomach with milk. Err - ok - a Latte! Cleaned up the dinner dishes and text Bri that he missed one heck of a dinner.

We were off to get Ty to Scouts. Brian picked Ty up from Scouts to head to bball practice so that I could go home. dOg was happy to see me, he came from upstairs to greet me. I let him out to potty while I fed and refreshed his water. I left him fully indulged in his dinner. Uhuh! I came upstairs to see he was busy with his evening's appetizer - 4 grease soaked paper towels!!! He had ate the middle and the only thing left was the whites of the edges where the grease didn't quite reach. dOg is 12.5 yrs old and knows better! Now trash day was yesterday so these paper towels were in the pit bottom of the can. I truly didn't think dOg would try to get to them. Prove me wrong one more time. He came upstairs - well to the front door landing, that's all the closer he wanted to be to me. I shamed him, he cowered and that was that. Except for the repercussions that might take effect on his stomach. Do I dare leave him in the house or do I confine him to the garage for the day? Do I go ahead and make rice to settle his stomach?

I didn't tell Brian what happened till this morning since I was asleep by the time they got home. Didn't even hear the garage door open - which is not normal for me, so I know I was super tired and needed it. I stayed behind this morning to make Brian a couple burritos so that he too could enjoy them. He did and then I told him to pop a couple of tums for insurance reasons. ; ) I hope there not as spicy going out as they were going in! ouch!

You are too funny! The burritos sound yummy. I have a recipe for home made tortilla's. It is pretty easy and they tast so much better than the store bought ones.
